The use of spices in their ‘makanan’ or food have people all over the world fascinated with Balinese cuisine. Local condiments such as ginger, kerupuk, laos and lemon basil are added to most dishes. While other cuisines throughout the world use these generic condiments, unique spices such as salam leaf, kencur and tamarind pulp tickle your tastebuds differently.
